Stir fries are healthy, quick, and easy to prepare. In this recipe, we used Tofu as the main protein source, but you can swap this and use your preferred protein, such as chicken, beef or lamb. Same goes with the vegetables. You can't go wrong. Enjoy!!
Ingredients
1 pack pad thai noodles (200g)
1 pack tofu or any protein (300g) – diced
1 bunch of broccolini
2 carrots
1/4 cup crushed peanuts
1 bird's eye chilli
2 cloves garlic
1 piece ginger
4 spring onions
1 can baby corn (410g)
1/2 cup tamari or soy sauce
1/3 cup maple syrup
3 tbsp avocado oil or another high smoke point oil
Instructions
1. Chop all of the vegetables, keeping the garlic, chilli, ginger and spring onions
separate once chopped. 2. Cook the rice noodles as instructions say on the packet and keep them in a strainer
until you need them. 3. Heat up the oil in a wok or fry pan and add the garlic, chilli, ginger and spring onions
– fry them for about 30 seconds. 4. Add in all remaining veggies and tofu, stirring them through until slightly soft. 5. Pour in the tamari and maple syrup. 6. Toss through the rice noodles until they are coated with the sauce and the vegetables
have been mixed through. 7. Serve hot with crushed peanuts on top.
Optional Extras: Sprinkle sesame seeds, lime, coriander, fresh chilli
TIP
If using meat (chicken, beef or lamb) as your main protein source, cook part way through first, separately then add at step 4.
